The “Elvis”

This was my very last cupcake for the WREG newsroom. As such, I really needed it to be a quintessential Memphis flavor. So I used Elvis’ favorite sandwich as inspiration.

You can even decorate the top so it looks like a peanut butter cookie.

For this cupcake, I used the cake part of the recipe from Epicurious with a popular icing recipe from AllRecipes.

I chose the Epicurious recipe because the ingredients suggest it would be more moist, compared to other banana recipes that turn out like muffins. I got the desired effect. This was very soft, and the bananas were at the perfect ripeness. If you buy yellow-green bananas and let them sit for several days, they’ll be perfect to use here. They should be a little spotty, but not totally brown.

I didn’t get a chance to gather “sound bites” on this one, since it was my last day at Channel 3. So those of you who tried this one, add your comments below!

Yields 12 cupcakes.

For the cupcakes:

  • 1 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 very ripe large bananas, peeled
  • 1/2 cup sour cream
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup sugar
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 large egg
  • 1 large egg yolk

For the icing:

  • 1/2 cup butter
  • 1 cup creamy peanut butter
  • 3 tbsp milk, as needed
  • 2 cups confectioner’s sugar

Cupcake directions:

1. Whisk flour, baking powder, baking soda, and salt in medium bowl to blend.

2. In a separate bowl, mash the bananas with a fork.

3. Add sour cream and vanilla to the bananas. Mix well.

4. In a third bowl, use an electric mixer to beat sugar and butter in large bowl until light and fluffy.

5. Add egg and egg yolk. Beat until well blended.

6. Add the flour mixture and bananas, alternating between the two. Start and end with the flour mixture.

7. Divide into lined cupcake tin.

8. Bake at 350 degrees F for about 20 minutes.
Icing directions:

1. Combine the butter and peanut butter into a bowl. Beat with an electric mixer.

2. Slowly add the confectioner’s sugar as you continue to beat.

3. When it becomes thick, add the milk one tablespoon at a time until you get the desired consistency.

4. Frost the cupcakes!
