{Blueberry-Filled Key Lime Cupcakes With Vodka Blueberry Buttercream Frosting}

Last year, I did a revised “Grizzlies” cupcake for Super Bowl 48, which was basically a red velvet with Skittles on it. This year, for Super Bowl 49, I stepped up the complexity a little.

I modified a recipe from Baked Perfection (replacing blackberries with blueberries), used a store-bought blueberry jam for the filling, and added that same jam plus vodka to their frosting. Of course, green sprinkles too!

No matter what your football team of choice is, you can get any team’s helmet ring pops like these here.

Yields 36 cupcakes.

For the cupcakes:

  • 1 c. butter, softened
  • 2 c. sugar
  • 3 eggs
  • 2 tsp. vanilla extract
  • 4 tbsp. key lime juice
  • zest of two limes
  • 3 1/2 c. all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 c. sour cream

For the filling and icing:

  • 1 jar blueberry jam
  • 2 sticks butter, softened
  • 1 tsp vanilla extract
  • pinch of salt
  • 6 cups powdered sugar
  • 3 tbsp. vodka

Cupcake directions:

  1. Preheat oven to 350 degrees. Place liners in cupcake tins.
  2. In a medium bowl, combine the flour, baking soda, baking powder, and salt.
  3. In a separate mixing bowl, cream the butter and sugar.
  4. Beat in the eggs, one at a time.
  5. Add the vanilla, key lime juice and lime zest; mix well.
  6. Add the flour mixture to creamed mixture alternately with sour cream (batter will be thick).
  7. Fill cupcake cups with 1/4 cup of batter.
  8. Bake for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool completely.
  9. Use a knife to cut a hole in each cupcake. Remove excess cake.
  10. Spoon blueberry jam into each cupcake.

Icing directions:

  1. Beat butter and vanilla until creamy.
  2. Mix in 1/3 c. of blueberry jam and salt.
  3. Add powdered sugar 1 c. at a time, beating until combined.
  4. Add vodka 1 tbsp. at a time until you reach desired consistency.
  5. Frost the cupcakes, and top with whatever you want!
